Ingredients

Frites

  • 18oz belgian fries(Frozen, according to package instructions)
  • 1 qt vegetable oil(For deep frying)

Chorizo & Aioli

  • 5oz chorizo sausage(Spanish, casing removed, crumbled)
  • 1/2 cup mayonnaise
  • 2 pcs garlic(minced)
  • 1 tsp paprika(Smoked or sweet, to taste)
  • 1 tsp lemon juice(Freshly squeezed)
  • 1/4 tsp salt(Or to taste)
  • 1/4 tsp black pepper(Freshly ground, or to taste)

Instructions

Prepare the Frites

  1. Heat vegetable oil in a deep fryer or a large, heavy-bottomed pot to 175°C (350°F).
  2. Carefully add the frozen Belgian fries to the hot oil in batches. Do not overcrowd the pot.
  3. Fry for about 5-7 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Cook the Chorizo

  1. While the fries are frying or draining, place the crumbled chorizo in a medium skillet over medium heat.
  2. Cook, breaking up any large pieces, until the chorizo is browned and slightly crispy, about 5-7 minutes. Drain off excess fat.

Assemble the Aioli

  1. In a small bowl, combine mayonnaise, minced garlic, paprika, and lemon juice. Stir until well combined.
  2. Season the aioli with salt and black pepper to taste.

Combine and Serve

  1. In a large bowl, toss the hot, crispy frites with the cooked chorizo crumbles.
  2. Arrange the mixed frites on a serving platter or individual plates.
  3. Drizzle generously with the prepared garlic aioli.
