Instructions

Prepare the Frites

  1. 1Heat vegetable oil in a deep fryer or a large, heavy-bottomed pot to 175°C (350°F).
  2. 2Carefully add the frozen Belgian fries to the hot oil in batches. Do not overcrowd the pot.
  3. 3Fry for about 5-7 minutes, or until golden brown and crispy. Remove with a slotted spoon and drain on paper towels.

Cook the Chorizo

  1. 1While the fries are frying or draining, place the crumbled chorizo in a medium skillet over medium heat.
  2. 2Cook, breaking up any large pieces, until the chorizo is browned and slightly crispy, about 5-7 minutes. Drain off excess fat.

Assemble the Aioli

  1. 1In a small bowl, combine mayonnaise, minced garlic, paprika, and lemon juice. Stir until well combined.
  2. 2Season the aioli with salt and black pepper to taste.

Combine and Serve

  1. 1In a large bowl, toss the hot, crispy frites with the cooked chorizo crumbles.
  2. 2Arrange the mixed frites on a serving platter or individual plates.
  3. 3Drizzle generously with the prepared garlic aioli.

Tips

  • For the crispiest fries, ensure your cooking oil is at the correct temperature before frying.
  • Do not overcrowd the fryer; cook fries in batches to maintain oil temperature and achieve crispiness.
  • Serve immediately after assembling for the best texture and flavor contrast.
