Ingredients

  • 1 cup dried apples(rinsed)
  • 1 cup dried prunes(pitted, rinsed)
  • 1/2 cup dried pears(optional, rinsed)
  • 2 5/8 qt water
  • 3 tbsp honey(or to taste)
  • 1 pc cinnamon stick
  • 3 pcs cloves
  • 3 tbsp lemon balm(fresh or dried)

Instructions

Making Uzvar

  1. In a large pot, combine the rinsed dried apples, prunes, and pears (if using) with 2.5 liters of water.
  2. Add the cinnamon stick and cloves to the pot.
  3. Bring the mixture to a boil over medium-high heat, then reduce the heat to low, cover, and simmer for at least 60 minutes, or until the fruits are tender.
  4. Remove the pot from the heat. Stir in the honey until dissolved. Add the lemon balm.
  5. Let the uzvar steep for another 10-15 minutes with the lid on.
  6. Strain the uzvar through a fine-mesh sieve, discarding the solids. Allow it to cool completely.
