  • 28oz canned diced tomatoes((1 large can))
  • 4 cup fish broth
  • 2 tsp herbes de provence
  • 1 tsp salt(or to taste)
  • 1/2 tsp black pepper(freshly ground, or to taste)
  • 1 1/2lb white fish fillets(such as cod, snapper, or halibut, cut into 2-inch pieces)
  • 1/4 cup fresh parsley(chopped, for garnish)

Instructions

Preparation

  1. Heat olive oil in a large pot or Dutch oven over medium heat.
  2. Add sliced fennel and cook until softened, about 5-7 minutes.
  3. Stir in minced garlic and cook for another minute until fragrant.

Cooking the Stew

  1. Pour in canned diced tomatoes (undrained) and fish broth. Add Herbes de Provence, salt, and pepper.
  2. Bring the mixture to a simmer, then reduce heat to low, cover, and let it cook for 15-20 minutes, allowing the flavors to meld.
