Instructions

Crust

  1. 1Preheat your oven to 180°C (350°F).
  2. 2In a medium bowl, combine the finely crushed speculoos cookies with the melted butter. Mix well until the crumbs are evenly moistened.
  3. 3Press the cookie mixture evenly into the bottom and up the sides of a 23cm (9-inch) tart pan with a removable bottom.
  4. 4Bake the crust for 10 minutes. Remove from oven and let it cool slightly while preparing the filling.

Caramelized Apples

  1. 1In a large skillet, melt 2oz of butter over medium heat.
  2. 2Add the sliced apples, granulated sugar, and ground cinnamon to the skillet. Cook, stirring occasionally, for about 15-20 minutes, or until the apples are tender and caramelized.
  3. 3Stir in the lemon juice during the last minute of cooking.

Assembly and Baking

  1. 1Spread the caramelized apples evenly over the pre-baked speculoos crust.
  2. 2Return the tart to the oven and bake for another 25-30 minutes, or until the filling is set and the crust is golden brown.
  3. 3Let the tart cool in the pan for at least 15 minutes before carefully removing the sides of the tart pan.

Tips

  • For an easy crust, place speculoos cookies in a food processor and pulse until finely ground.
  • Cook apples until they are tender but still hold their shape for the best texture in the tart.
  • Serve warm or at room temperature. A dollop of whipped cream or a scoop of vanilla ice cream complements the tart perfectly.
