Instructions
Crust
- 1Preheat your oven to 180°C (350°F).
- 2In a medium bowl, combine the finely crushed speculoos cookies with the melted butter. Mix well until the crumbs are evenly moistened.
- 3Press the cookie mixture evenly into the bottom and up the sides of a 23cm (9-inch) tart pan with a removable bottom.
- 4Bake the crust for 10 minutes. Remove from oven and let it cool slightly while preparing the filling.
Caramelized Apples
- 1In a large skillet, melt 2oz of butter over medium heat.
- 2Add the sliced apples, granulated sugar, and ground cinnamon to the skillet. Cook, stirring occasionally, for about 15-20 minutes, or until the apples are tender and caramelized.
- 3Stir in the lemon juice during the last minute of cooking.
Assembly and Baking
- 1Spread the caramelized apples evenly over the pre-baked speculoos crust.
- 2Return the tart to the oven and bake for another 25-30 minutes, or until the filling is set and the crust is golden brown.
- 3Let the tart cool in the pan for at least 15 minutes before carefully removing the sides of the tart pan.

Tips
- For an easy crust, place speculoos cookies in a food processor and pulse until finely ground.
- Cook apples until they are tender but still hold their shape for the best texture in the tart.
- Serve warm or at room temperature. A dollop of whipped cream or a scoop of vanilla ice cream complements the tart perfectly.
