Ingredients

Vegetables & Pears

  • 2 pcs smoked pears(cored and diced)
  • 18oz beets(peeled and grated)
  • 5oz carrots(peeled and grated)
  • 1 pc yellow onions(chopped)
  • 7oz cabbage(shredded)
  • 7oz potatoes(peeled and diced)
  • 3 pcs garlic(minced)

Broth & Flavor Base

  • 1 3/5 qt beef broth(or vegetable broth for vegetarian)
  • 2 tbsp tomato paste
  • 2 tbsp apple cider vinegar
  • 1 pc bay leaf
  • 2 tbsp dill(fresh, chopped)
  • 2 tbsp parsley(fresh, chopped)
  • salt(to taste)
  • black pepper(to taste)
  • 2 tbsp vegetable oil

For Serving (Optional)

  • sour cream(or vegan sour cream)
  • fresh dill(for garnish)

Instructions

Sautéing Aromatics and Vegetables

  1. Heat vegetable oil in a large pot or Dutch oven over medium heat.
  2. Add chopped onions and sauté until softened, about 5-7 minutes.
  3. Add grated carrots and cook for another 5 minutes until slightly tender.
  4. Stir in the grated beets and cook for 5-7 minutes, stirring occasionally.
  5. Add tomato paste and cook for 1-2 minutes, stirring constantly.

Simmering the Borscht

  1. Pour in the beef broth and bring to a simmer.
  2. Add the diced potatoes, shredded cabbage, smoked pears, and bay leaf.
  3. Reduce heat to low, cover, and simmer for 30-40 minutes, or until vegetables are tender.
  4. Stir in minced garlic, apple cider vinegar, fresh dill, and fresh parsley.
  5. Season with salt and black pepper to taste.
  6. Remove bay leaf before serving.

Serving

  1. Ladle the Smoked Pear Borscht into bowls.
  2. Serve hot, optionally topped with a dollop of sour cream and fresh dill.
