Instructions

Sautéing Aromatics and Vegetables

  1. 1Heat vegetable oil in a large pot or Dutch oven over medium heat.
  2. 2Add chopped onions and sauté until softened, about 5-7 minutes.
  3. 3Add grated carrots and cook for another 5 minutes until slightly tender.
  4. 4Stir in the grated beets and cook for 5-7 minutes, stirring occasionally.

Simmering the Borscht

  1. 1Pour in the beef broth and bring to a simmer.
  2. 2Add the diced potatoes, shredded cabbage, smoked pears, and bay leaf.
  3. 3Reduce heat to low, cover, and simmer for 30-40 minutes, or until vegetables are tender.
  4. 4Stir in minced garlic, apple cider vinegar, fresh dill, and fresh parsley.
  5. 5Season with salt and black pepper to taste.
