Ingredients
Chicken
- 1 pc whole chicken(about 3-4 lbs, rinsed and patted dry)
Poaching Liquid
- 4oz ginger(sliced)
- 6 pcs garlic(cloves, smashed)
- 3 pcs pandan leaves(knotted)
- 4 cup chicken broth(low sodium)
- 2 cup water(enough to cover chicken)
- 1 tbsp salt
Instructions
Prepare the Chicken
- Rinse the whole chicken thoroughly and pat it dry inside and out with paper towels. This ensures a cleaner poach and better texture.
Cook the Chicken
- Place the sliced ginger, smashed garlic cloves, and knotted pandan leaves into the bottom of your slow cooker.
- Place the whole chicken on top of the aromatics in the slow cooker.
- Pour in the chicken broth and water, ensuring the chicken is mostly submerged. Add the salt.
- Cover the slow cooker and cook on low for 3 to 3.5 hours, or until the chicken is cooked through and tender. The exact time will depend on your slow cooker and the size of the chicken.
- Once cooked, carefully remove the chicken from the slow cooker and let it rest for about 10-15 minutes before carving. Reserve the poaching liquid for making Hainanese rice or a flavorful broth.
