Ingredients

Chicken

  • 1 pc whole chicken(about 3-4 lbs, rinsed and patted dry)

Poaching Liquid

  • 4oz ginger(sliced)
  • 6 pcs garlic(cloves, smashed)
  • 3 pcs pandan leaves(knotted)
  • 4 cup chicken broth(low sodium)
  • 2 cup water(enough to cover chicken)
  • 1 tbsp salt

Instructions

Prepare the Chicken

  1. Rinse the whole chicken thoroughly and pat it dry inside and out with paper towels. This ensures a cleaner poach and better texture.

Cook the Chicken

  1. Place the sliced ginger, smashed garlic cloves, and knotted pandan leaves into the bottom of your slow cooker.
  2. Place the whole chicken on top of the aromatics in the slow cooker.
  3. Pour in the chicken broth and water, ensuring the chicken is mostly submerged. Add the salt.
  4. Cover the slow cooker and cook on low for 3 to 3.5 hours, or until the chicken is cooked through and tender. The exact time will depend on your slow cooker and the size of the chicken.
  5. Once cooked, carefully remove the chicken from the slow cooker and let it rest for about 10-15 minutes before carving. Reserve the poaching liquid for making Hainanese rice or a flavorful broth.
