Ingredients

  • 1 pc whole chicken(about 3-4 lbs, cleaned)
  • 4 pcs lotus leaves(dried, rehydrated)

Marinade

  • 4 tbsp shaoxing wine
  • 2 tbsp ginger(thinly sliced)
  • 4 pcs scallions(white parts, smashed)
  • 3 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp salt
  • 1/2 tsp white pepper

Filling

  • 4 pcs shiitake mushrooms(dried, rehydrated and sliced)
  • 2oz smoked bacon(diced)
  • 2 pcs cooked chinese sausage(sliced)

Instructions

Preparation

  1. Soak dried lotus leaves in warm water for at least 30 minutes, or until pliable. drain and set aside.
  2. In a small bowl, whisk together all marinade ingredients. place the chicken in a large bowl or resealable bag and pour the marinade over it. ensuring the chicken is evenly coated. marinate in the refrigerator for at least 1 hour, or preferably overnight.
  3. Prepare the filling by mixing the rehydrated shiitake mushrooms, diced bacon, and sliced chinese sausage. set aside.

Assembly and Cooking

  1. Remove the chicken from the marinade, reserving any excess marinade. pat the chicken dry.
  2. Stuff the cavity of the chicken with the prepared filling ingredients.
  3. Lay out two rehydrated lotus leaves on a clean surface, overlapping them slightly to form a large rectangular wrap. place the stuffed chicken in the center.
  4. Wrap the chicken tightly with the lotus leaves, ensuring it is completely enclosed. you may need to use kitchen twine to secure the package.
  5. Place the wrapped chicken in the slow cooker. pour any reserved marinade liquid around the chicken.
  6. Cook on low for 4-5 hours, or on high for 2-3 hours, or until the chicken is cooked through and tender. the exact cooking time will depend on your slow cooker and the size of the chicken.

Finishing

  1. Carefully remove the lotus leaf-wrapped chicken from the slow cooker. let it rest for 10 minutes before unwrapping.
  2. Unwrap the chicken and serve hot.
