Marinade
- 4 tbsp shaoxing wine

- 4 pcs shiitake mushrooms(dried, rehydrated and sliced)
- 2oz smoked bacon(diced)
- 2 pcs cooked chinese sausage(sliced)
Instructions
Preparation
- Soak dried lotus leaves in warm water for at least 30 minutes, or until pliable. drain and set aside.
- In a small bowl, whisk together all marinade ingredients. place the chicken in a large bowl or resealable bag and pour the marinade over it. ensuring the chicken is evenly coated. marinate in the refrigerator for at least 1 hour, or preferably overnight.
- Prepare the filling by mixing the rehydrated shiitake mushrooms, diced bacon, and sliced chinese sausage. set aside.
Assembly and Cooking
- Remove the chicken from the marinade, reserving any excess marinade. pat the chicken dry.
- Stuff the cavity of the chicken with the prepared filling ingredients.
- Lay out two rehydrated lotus leaves on a clean surface, overlapping them slightly to form a large rectangular wrap. place the stuffed chicken in the center.
- Wrap the chicken tightly with the lotus leaves, ensuring it is completely enclosed. you may need to use kitchen twine to secure the package.
- Place the wrapped chicken in the slow cooker. pour any reserved marinade liquid around the chicken.
- Cook on low for 4-5 hours, or on high for 2-3 hours, or until the chicken is cooked through and tender. the exact cooking time will depend on your slow cooker and the size of the chicken.
Finishing
