  1. 1Pat the beef chuck roast cubes dry with paper towels and season generously with salt and pepper.
  2. 2In a large skillet over medium-high heat, brown the bacon lardons until crisp. Remove with a slotted spoon and set aside, leaving the rendered fat in the skillet.
  3. 3Sear the beef cubes in batches in the same skillet until browned on all sides. Remove and set aside.

Slow Cooking

  1. 1Deglaze the skillet with a splash of Burgundy wine, scraping up any browned bits from the bottom. Pour into the slow cooker.
  2. 2Add the seared beef, browned bacon, carrots, chopped onions, minced garlic, tomato paste, dried thyme, and bay leaves to the slow cooker.
  3. 3Pour in the remaining Burgundy wine and beef broth. Stir gently to combine.
  4. 4Cook on low for 7-8 hours or on high for 3-4 hours, or until the beef is fork-tender.

Finishing Touches

  1. 1About 30 minutes before serving, heat olive oil in a skillet. Add quartered mushrooms and pearl onions. Sauté until tender and lightly browned.
  2. 2In a small bowl, whisk the all-purpose flour with a few tablespoons of the slow cooker liquid to create a slurry. Stir this into the slow cooker to thicken the sauce.
