  1. 1In a skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
  2. 2Add the browned chouriço slices to the slow cooker insert. Stir in the cooked shredded duck meat, sautéed onion and garlic.
  3. 3Add the uncooked long-grain rice, chicken broth, and bay leaf to the slow cooker. Season with salt and black pepper to taste. Stir everything together.
  4. 4Cover and cook on low for 4-6 hours, or until the rice is tender and the liquid is absorbed. Stir occasionally if possible, or at least halfway through cooking.
  5. 5Once cooked, remove the bay leaf. Fluff the rice gently with a fork.
