- 1In a skillet, heat olive oil over medium heat. Add chopped onion and cook until softened, about 5 minutes. Add minced garlic and cook for another minute until fragrant.
- 2Add the browned chouriço slices to the slow cooker insert. Stir in the cooked shredded duck meat, sautéed onion and garlic.
- 3Add the uncooked long-grain rice, chicken broth, and bay leaf to the slow cooker. Season with salt and black pepper to taste. Stir everything together.
- 4Cover and cook on low for 4-6 hours, or until the rice is tender and the liquid is absorbed. Stir occasionally if possible, or at least halfway through cooking.
- 5Once cooked, remove the bay leaf. Fluff the rice gently with a fork.
