Ingredients

Pizza Base

  • 1lb pre-made pizza dough(or a large pizza crust)
  • 1 tbsp olive oil

Shrimp Scampi Topping

  • 1lb shrimp(peeled, deveined, tails on or off)
  • 4 pcs garlic(minced)
  • 2 tbsp butter
  • 1/4 cup white wine(or chicken broth)
  • 1 tbsp lemon juice
  • 1/4 tsp red pepper flakes(optional)
  • 2 tbsp fresh parsley(chopped)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Cheese & Garnish

  • 1 1/2 cup mozzarella cheese(shredded, low-moisture)
  • 1/2 cup parmesan cheese(grated)

Instructions

Prepare Shrimp Scampi

  1. Pat shrimp dry with paper towels. Season with salt and pepper.
  2. In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes (if using) and cook for 1 minute until fragrant. Do not brown.
  3. Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and opaque. Do not overcook.
  4. Pour in white wine (or broth) and lemon juice, bringing to a simmer. Remove from heat and stir in fresh parsley. Set aside.

Assemble & Bake Pizza

  1. Preheat oven to 450°F (230°C). If using a pizza stone, place it in the oven while preheating.
  2. Lightly flour a clean surface and roll out the pizza dough to your desired thickness and shape. Transfer to a pizza peel dusted with cornmeal or a baking sheet lined with parchment paper.
  3. Brush the rolled-out dough lightly with olive oil.
  4. Evenly sprinkle the mozzarella cheese over the olive oil-brushed crust.
  5. Arrange the cooked shrimp evenly over the cheese. Drizzle any remaining scampi sauce from the skillet over the pizza.
  6. Sprinkle with grated Parmesan cheese.
  7. Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned. Cooking time may vary depending on your oven and crust thickness.

Serve

  1. Remove the pizza from the oven and let it cool for a few minutes before slicing.
  2. Garnish with additional fresh parsley if desired. Serve hot.
