Ingredients
Pizza Base
- 1lb pre-made pizza dough(or a large pizza crust)
 - 1 tbsp olive oil
 
Shrimp Scampi Topping
- 1lb shrimp(peeled, deveined, tails on or off)
 - 4 pcs garlic(minced)
 - 2 tbsp butter
 - 1/4 cup white wine(or chicken broth)
 - 1 tbsp lemon juice
 - 1/4 tsp red pepper flakes(optional)
 - 2 tbsp fresh parsley(chopped)
 - 1/2 tsp salt
 - 1/4 tsp black pepper
 
Cheese & Garnish
- 1 1/2 cup mozzarella cheese(shredded, low-moisture)
 - 1/2 cup parmesan cheese(grated)
 
Instructions
Prepare Shrimp Scampi
- Pat shrimp dry with paper towels. Season with salt and pepper.
 - In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes (if using) and cook for 1 minute until fragrant. Do not brown.
 - Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and opaque. Do not overcook.
 - Pour in white wine (or broth) and lemon juice, bringing to a simmer. Remove from heat and stir in fresh parsley. Set aside.
 
Assemble & Bake Pizza
- Preheat oven to 450°F (230°C). If using a pizza stone, place it in the oven while preheating.
 - Lightly flour a clean surface and roll out the pizza dough to your desired thickness and shape. Transfer to a pizza peel dusted with cornmeal or a baking sheet lined with parchment paper.
 - Brush the rolled-out dough lightly with olive oil.
 - Evenly sprinkle the mozzarella cheese over the olive oil-brushed crust.
 - Arrange the cooked shrimp evenly over the cheese. Drizzle any remaining scampi sauce from the skillet over the pizza.
 - Sprinkle with grated Parmesan cheese.
 - Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned. Cooking time may vary depending on your oven and crust thickness.
 
Serve
- Remove the pizza from the oven and let it cool for a few minutes before slicing.
 - Garnish with additional fresh parsley if desired. Serve hot.
