Instructions

Prepare Shrimp Scampi

  1. 1Pat shrimp dry with paper towels. Season with salt and pepper.
  2. 2In a large skillet, melt butter over medium heat. Add garlic and red pepper flakes (if using) and cook for 1 minute until fragrant. Do not brown.
  3. 3Add shrimp to the skillet and cook for 1-2 minutes per side, until pink and opaque. Do not overcook.
  4. 4Pour in white wine (or broth) and lemon juice, bringing to a simmer. Remove from heat and stir in fresh parsley. Set aside.

Assemble & Bake Pizza

  1. 1Preheat oven to 450°F (230°C). If using a pizza stone, place it in the oven while preheating.
  2. 2Lightly flour a clean surface and roll out the pizza dough to your desired thickness and shape. Transfer to a pizza peel dusted with cornmeal or a baking sheet lined with parchment paper.
  3. 3Brush the rolled-out dough lightly with olive oil.
  4. 4Evenly sprinkle the mozzarella cheese over the olive oil-brushed crust.
  5. 5Arrange the cooked shrimp evenly over the cheese. Drizzle any remaining scampi sauce from the skillet over the pizza.
  6. 6Sprinkle with grated Parmesan cheese.
  7. 7Bake for 12-15 minutes, or until the crust is golden brown and the cheese is bubbly and slightly browned. Cooking time may vary depending on your oven and crust thickness.

Serve

  1. 1Remove the pizza from the oven and let it cool for a few minutes before slicing.
  2. 2Garnish with additional fresh parsley if desired. Serve hot.
