Ingredients
- 14oz haggis(crumbled)
- 18oz lamb mince
- 2 pcs carrots(peeled and roughly chopped)
- 1 pc onions(peeled and roughly chopped)
- 16 7/8 fl oz vegetable broth
- 2lb potatoes(peeled and cut into large chunks)
- 2 tbsp vegetable oil
- 2 tbsp flour
- 1 tbsp worcestershire sauce
- tsp salt(to taste)
- tsp black pepper(to taste)
- 2oz butter(for the potato topping)
- 3 3/8 fl oz milk(for the potato topping, warmed)
Instructions
Haggis Topping
- Preheat your oven to 200°C (180°C fan/Gas Mark 6).
- Boil the potato chunks in salted water for 15-20 minutes, until tender. Drain well.
- Mash the potatoes with butter and warmed milk until smooth. Season with salt and pepper. Set aside.
- In a separate bowl, crumble the haggis if it's in a casing. You want a coarse texture for the topping.
Lamb Filling
- Heat the vegetable oil in a large, ovenproof skillet or saucepan over medium-high heat.
- Add the lamb mince and cook, breaking it up with a spoon, until browned. Drain off any excess fat.
- Add the chopped carrots and onions to the skillet. Cook for 5-7 minutes until softened.
- Sprinkle the flour over the meat and vegetables. Stir well and cook for 1 minute.
- Gradually pour in the vegetable broth, stirring constantly to avoid lumps. Bring to a simmer.
- Stir in the Worcestershire sauce, salt, and pepper. Let the filling simmer for 10 minutes, stirring occasionally, until thickened.
Assembly and Baking
- Spread the mashed potato evenly over the lamb filling in the skillet. You can create fork patterns for a decorative finish.
- Alternatively, transfer the lamb filling to a baking dish and top with the mashed potato.
- Sprinkle the crumbled haggis over the mashed potato topping. Aim for an even layer.
- Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown and the filling is bubbling.
- Allow to stand for 5-10 minutes before serving.
