- 18oz ground lamb(or ground beef)
- 1 pc onion(finely chopped)
- 2 pcs carrots(diced)
- 2 tbsp garlic(minced)
- 2 tbsp tomato paste
- 1 tbsp worcestershire sauce
- 8 3/7 fl oz beef broth
- 4oz peas(frozen)
- 2 tbsp vegetable oil
- salt(to taste)
- black pepper(to taste)
For the Bubble and Squeak Topping
- 18oz mashed potatoes(cold, leftover)
- 7oz cabbage(shredded, leftover cooked)
- 7oz mixed cooked vegetables(chopped, such as carrots, peas, swede (optional))
- 1 pc egg(beaten)
- 1 tbsp butter
Instructions
Prepare the Filling
- Heat vegetable oil in a large oven-safe skillet or pot over medium-high heat.
- Add the ground lamb and cook, breaking it up with a spoon, until browned. Drain off excess fat.
- Add the chopped onion and diced carrots to the skillet. Cook until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for 1 minute more until fragrant.
- Add the tomato paste and Worcestershire sauce, stirring to coat the meat and vegetables.
- Pour in the beef broth and bring to a simmer. Reduce heat, cover, and let it cook for 15-20 minutes, or until the sauce has thickened.
- Stir in the frozen peas. Season the filling with salt and black pepper to taste.
Make the Bubble and Squeak Topping
- In a separate bowl, combine the cold mashed potatoes, shredded cooked cabbage, and chopped mixed cooked vegetables (if using).
- Add the beaten egg to the potato and vegetable mixture and mix well. Season with salt and pepper.
- Divide the potato mixture and spread it evenly over the meat filling in the skillet. You can create peaks and patterns with a fork for a rustic look.
Bake the Dish
