Instructions

Preparing the Pie

  1. 1Preheat your oven to 200°C (400°F). Grease a 23cm (9-inch) pie dish.
  2. 2Line the pie dish with one sheet of pastry, pressing it gently into the base and up the sides. Trim any excess.
  3. 3In a large bowl, gently toss the sliced apples with the sautéed onion, fresh thyme leaves, salt, and pepper.
  4. 4Arrange half of the apple mixture in the pastry-lined dish.
  5. 5Sprinkle half of the grated cheddar cheese over the apples.
  6. 6Layer the remaining apple mixture on top, followed by the remaining cheddar cheese.
  7. 7Brush the edges of the bottom pastry with a little water. Place the second sheet of pastry over the filling. Trim and crimp the edges to seal well.
  8. 8Cut a few slits in the top crust to allow steam to escape. Brush the entire top with the beaten egg wash.

Baking the Pie

  1. 1Place the pie on a baking sheet (to catch any potential drips).
  2. 2Bake in the preheated oven for 15 minutes.
  3. 3Reduce the oven temperature to 180°C (350°F) and continue baking for another 35-40 minutes, or until the crust is golden brown and the filling is bubbling.
