Ingredients

  • 2 cup greek yogurt(full-fat recommended)
  • 1 cup cucumber(peeled, seeded, and finely grated)
  • 1/4 cup fresh mint(finely chopped)
  • 2 tbsp lemon juice(freshly squeezed)
  • 1 tsp garlic(minced or grated)
  • 1/2 tsp salt(or to taste)
  • 1/4 tsp black pepper(freshly ground, or to taste)

Instructions

Making the Popsicles

  1. In a medium bowl, combine the Greek yogurt, grated cucumber, chopped mint, lemon juice, and minced garlic.
  2. Stir well until all ingredients are thoroughly incorporated. Season with salt and black pepper to taste.
  3. Pour the mixture into popsicle molds, leaving a small amount of space at the top for expansion.
  4. Insert popsicle sticks into the molds.
  5. Place the filled molds in the freezer and freeze for at least 4 hours, or until completely solid.
