- 1 cup cucumber(peeled, seeded, and finely grated)
- 1/4 cup fresh mint(finely chopped)
- 2 tbsp lemon juice(freshly squeezed)

Instructions
Making the Popsicles
- In a medium bowl, combine the Greek yogurt, grated cucumber, chopped mint, lemon juice, and minced garlic.
- Stir well until all ingredients are thoroughly incorporated. Season with salt and black pepper to taste.
- Pour the mixture into popsicle molds, leaving a small amount of space at the top for expansion.
- Insert popsicle sticks into the molds.
- Place the filled molds in the freezer and freeze for at least 4 hours, or until completely solid.
