Ingredients

  • 14oz store-bought spätzle
  • 5oz spinach(fresh)
  • 7oz mushrooms(sliced)
  • 1 pc onion(chopped)
  • 2 pcs garlic(minced)
  • 2 tbsp butter
  • 4oz cheddar cheese(shredded)
  • 4oz swiss cheese(shredded)
  • 4 tbsp milk
  • salt(to taste)
  • black pepper(freshly ground, to taste)

Instructions

Prepare Spätzle

  1. Cook the store-bought spätzle according to package directions. Drain well and set aside.

Sauté Vegetables

  1. In a large skillet, melt the butter over medium heat. Add the chopped onion and sauté until softened, about 3-4 minutes.
  2. Add the minced garlic and sliced mushrooms to the skillet. Cook until the mushrooms are browned and tender, about 5-7 minutes.
  3. Stir in the fresh spinach and cook until it wilts, about 1-2 minutes.

Combine and Cheese

  1. Add the drained spätzle to the skillet with the vegetables. Toss gently to combine.
  2. Sprinkle the shredded cheddar and Swiss cheeses over the spätzle and vegetable mixture. Pour in the milk. Stir gently until the cheese is melted and forms a creamy sauce. Season with salt and freshly ground black pepper to taste.
