Grilling
- 1Preheat your grill to high heat (around 500°F/260°C). If using a pizza stone or steel on the grill, preheat it as well.
- 2Lightly flour a pizza peel or a sheet of parchment paper. Stretch the pizza dough to about 12 inches in diameter. If using parchment, place the dough on it.
- 3Spread the crushed San Marzano tomatoes evenly over the pizza dough, leaving a small border for the crust.
- 4Add the torn mozzarella pieces over the tomato sauce.
- 5Carefully slide the pizza onto the preheated grill grates or directly onto the hot pizza stone/steel. If using parchment paper, slide it with the dough onto the grill (you can remove the parchment partway through cooking if needed for better char).
- 6Close the grill lid and cook for 3-5 minutes, or until the crust is golden brown and charred, and the cheese is melted and bubbly.
- 7Carefully remove the pizza from the grill using the peel or tongs.
- 8Drizzle with olive oil and scatter fresh basil leaves over the hot pizza. Season with salt if desired.
