Instructions

For the Mexican Red Rice

  2. 2Heat vegetable oil in a medium saucepan over medium heat. Add the rinsed rice and cook, stirring frequently, for 3-5 minutes until the rice begins to slightly toast and turn golden.
  3. 3Stir in the diced onion and minced garlic, cooking for another 2-3 minutes until fragrant and softened.
  4. 4Add the tomato paste, cumin, chili powder, and salt. Cook for 1 minute, stirring constantly to coat the rice and toast the spices.
  5. 5Pour in the chicken or vegetable broth. Bring to a boil, then reduce heat to low, cover tightly, and simmer for 15-20 minutes, or until all liquid is absorbed and the rice is tender. Do not lift the lid during cooking.
