Ingredients

Crust

  • 1 pc pie crust(9-inch, pre-made or homemade)

Filling

  • 6oz bacon(diced)
  • 2 pcs onions(medium, thinly sliced)
  • 4 pcs eggs(large)
  • 1 1/2 cup heavy cream
  • 1 1/2 cup emmental cheese(shredded (or Gruyère))
  • 1/2 tsp salt
  • 1/4 tsp black pepper(freshly ground)
  • 1/8 tsp nutmeg(ground)
  • 1 tbsp butter

Instructions

Preparation

  1. Preheat your oven to 375°F (190°C). Place the pie crust in a 9-inch pie plate. Crimp the edges as desired.
  2. In a large skillet, cook the diced bacon over medium heat until crispy. Remove bacon with a slotted spoon and set aside, reserving 1 tablespoon of bacon fat in the pan.
  3. Add 1 tablespoon of butter and the thinly sliced onions to the skillet. Cook over medium-low heat, stirring occasionally, for 20-25 minutes, or until deeply golden brown and caramelized.

Assembly and Baking

  1. Sprinkle half of the shredded Emmental cheese evenly over the bottom of the pie crust.
  2. Distribute the cooked bacon and caramelized onions over the cheese in the pie crust.
  3. In a medium bowl, whisk together the eggs, heavy cream, salt, pepper, and nutmeg until well combined.
  4. Carefully pour the egg mixture over the bacon, onions, and cheese in the pie crust.
  5. Sprinkle the remaining shredded Emmental cheese over the top of the quiche.
  6. Bake for 45-55 minutes, or until the center is just set and the top is golden brown. A knife inserted near the center should come out clean.
  7. Remove from the oven and let the quiche cool on a wire rack for at least 10-15 minutes before slicing and serving. This allows the custard to fully set.
