Prosciutto, Arugula, and Fig Coal-Fired Pizza

Prosciutto, Arugula, and Fig Coal-Fired Pizza

Indulge in a gourmet coal-fired pizza experience with this tantalizing combination of sweet, savory, and peppery flavors. The extreme heat of a coal-fired oven creates a crust with a distinctive leopard-spotted char, achieving a perfect balance of chewy and crispy textures. This artisanal foundation cradles a mouth-watering array of toppings: salty, thinly sliced prosciutto, creamy goat cheese, and sweet, jammy fresh figs that caramelize beautifully. A vibrant bed of fresh arugula is added after baking, providing a peppery counterpoint, all finished with a drizzle of sweet and tangy balsamic glaze. This pizza highlights the unique characteristics of coal-fired cooking, delivering a sophisticated and memorable dish.

Instructions

Preparation

  1. 1If using a coal-fired oven, preheat it according to the manufacturer's instructions until it reaches around 800-900°F (425-480°C). If using a home oven, preheat with a pizza stone to its highest temperature, typically 500-550°F (260-290°C), for at least 30 minutes.
  2. 2Lightly dust a pizza peel with cornmeal. On a floured surface, gently stretch or roll one pizza dough ball into a 12-inch circle.

Assembly & Cooking

  1. 1Transfer the stretched dough to the prepared pizza peel. Brush the dough lightly with olive oil. Scatter half of the crumbled goat cheese evenly over the dough.
  2. 2Arrange half of the sliced fresh figs over the goat cheese.
  3. 3Carefully slide the pizza into the scorching hot coal-fired oven (or onto the preheated pizza stone). Cook for 2-5 minutes, rotating occasionally, until the crust is beautifully charred, bubbly, and the cheese is melted and slightly golden. Cooking times will vary significantly based on oven temperature and coal intensity.
  4. 4Once cooked, remove the pizza from the oven and immediately drape half of the prosciutto slices over the hot pizza. Top with half of the fresh arugula.
  5. 5Drizzle generously with balsamic glaze. Slice and serve hot. Repeat the process for the second pizza.

Tips

  • Ensure your pizza dough is at room temperature before stretching for easier handling and better elasticity.
  • Monitor the pizza closely in the coal-fired oven; it cooks very quickly due to the intense heat.
  • Add the fresh arugula and balsamic glaze just before serving to maintain their texture and vibrant flavor.
