Instructions

Marinating the Pork

  1. 1In a large bowl, combine pork cubes, lemon juice, dried oregano, minced garlic, olive oil, salt, and pepper.
  2. 2Toss well to ensure pork is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

Assembling and Grilling

  1. 1Preheat grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. 2Thread marinated pork cubes onto skewers, alternating with pieces of bell pepper, red onion wedges, and cherry tomatoes.
  3. 3Grill skewers for 10-15 minutes, turning occasionally, until pork is cooked through and vegetables are tender and slightly charred.
  4. 4While skewers are grilling, warm the pita bread on the grill for the last 2-3 minutes of cooking time.
