Instructions
Marinating the Pork
- 1In a large bowl, combine pork cubes, lemon juice, dried oregano, minced garlic, olive oil, salt, and pepper.
- 2Toss well to ensure pork is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
Assembling and Grilling
- 1Preheat grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- 2Thread marinated pork cubes onto skewers, alternating with pieces of bell pepper, red onion wedges, and cherry tomatoes.
- 3Grill skewers for 10-15 minutes, turning occasionally, until pork is cooked through and vegetables are tender and slightly charred.
- 4While skewers are grilling, warm the pita bread on the grill for the last 2-3 minutes of cooking time.

Tips
- Marinate the pork for longer, ideally overnight, for deeper flavor infusion into the meat.
- Ensure the grill is hot before placing the skewers to get a good sear on the pork and vegetables.
- Serve the gyros skewers immediately with warm pita bread, tzatziki sauce, and a side salad for a complete meal.
