Ingredients
For the Pork Marinade
- 2lb pork shoulder(cut into 2.5cm cubes)
- 1 pc lemon(juiced)
- 2 tbsp oregano(dried)
- 4 pcs garlic(minced)
- 4 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper(freshly ground)
For the Skewers
- 2 pcs bell pepper(cut into 2.5cm pieces)
- 1 pc red onion(cut into wedges)
- 7oz cherry tomatoes
- 4 pcs pita bread
For Serving
- 7oz tzatziki sauce(store-bought or homemade)
Instructions
Marinating the Pork
- In a large bowl, combine pork cubes, lemon juice, dried oregano, minced garlic, olive oil, salt, and pepper.
- Toss well to ensure pork is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
Assembling and Grilling
- Preheat grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
- Thread marinated pork cubes onto skewers, alternating with pieces of bell pepper, red onion wedges, and cherry tomatoes.
- Grill skewers for 10-15 minutes, turning occasionally, until pork is cooked through and vegetables are tender and slightly charred.
- While skewers are grilling, warm the pita bread on the grill for the last 2-3 minutes of cooking time.
