Pork Gyros Skewers with Lemon-Oregano

Ingredients

For the Pork Marinade

  • 2lb pork shoulder(cut into 2.5cm cubes)
  • 1 pc lemon(juiced)
  • 2 tbsp oregano(dried)
  • 4 pcs garlic(minced)
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper(freshly ground)

For the Skewers

  • 2 pcs bell pepper(cut into 2.5cm pieces)
  • 1 pc red onion(cut into wedges)
  • 7oz cherry tomatoes
  • 4 pcs pita bread

For Serving

  • 7oz tzatziki sauce(store-bought or homemade)

Instructions

Marinating the Pork

  1. In a large bowl, combine pork cubes, lemon juice, dried oregano, minced garlic, olive oil, salt, and pepper.
  2. Toss well to ensure pork is evenly coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.

Assembling and Grilling

  1. Preheat grill to medium-high heat. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  2. Thread marinated pork cubes onto skewers, alternating with pieces of bell pepper, red onion wedges, and cherry tomatoes.
  3. Grill skewers for 10-15 minutes, turning occasionally, until pork is cooked through and vegetables are tender and slightly charred.
  4. While skewers are grilling, warm the pita bread on the grill for the last 2-3 minutes of cooking time.
