- 18oz new potatoes(halved or quartered if large)
- 2 tbsp olive oil
- 1 tsp salt(or to taste)
- 1/2 tsp black pepper(or to taste)
- 2 tbsp fresh dill(chopped)
- 1 pc lemon(zest and juice)
For the Salmon
- 2 pcs salmon fillets(skin on or off, about 5oz each)
- 2 tbsp butter(unsalted)
- 1 tbsp olive oil
- 1/2 tsp salt(or to taste)
- 1/4 tsp black pepper(or to taste)
Instructions
Cook the Potatoes
- Preheat oven to 200°C (400°F).
- In a bowl, toss the new potatoes with olive oil, salt, and pepper.
- Spread the potatoes in a single layer on a baking sheet.
- Roast for 20-25 minutes, or until tender and slightly golden.
- Once cooked, toss the potatoes with fresh dill, lemon zest, and lemon juice.
Sear the Salmon
- Pat the salmon fillets dry with paper towels and season with salt and pepper.
- Heat 1 tbsp olive oil and 1 tbsp butter in a non-stick skillet over medium-high heat until the butter is melted and shimmering.
- Place the salmon fillets, skin-side down (if using skin-on), into the hot skillet.
- Sear for 3-4 minutes until the skin is crispy and golden.
- Flip the salmon fillets and add the remaining 1 tbsp of butter to the skillet.
- Cook for another 2-4 minutes, basting the salmon with the melted butter, until cooked through to your liking.
Serve
- Divide the lemon-dill new potatoes between two plates.
- Top each plate with a salmon fillet.
- Serve immediately.
