Instructions
Prepare Tart Shells
- Preheat oven to 425°F (220°C). Lightly grease a 12-cup muffin tin.
- Unroll the thawed puff pastry sheets onto a lightly floured surface.
- Cut out circles slightly larger than the muffin tin cups. Gently press the pastry circles into the muffin cups, ensuring they line the bottom and sides.
- Prick the bottom of each pastry shell with a fork.
Make the Custard Filling
- In a high-speed blender, combine the drained cashews, coconut milk, sugar, cornstarch, lemon zest, vanilla extract, and turmeric (if using).
- Blend until completely smooth, ensuring no cashew lumps remain. The mixture should be thick and creamy.
Assemble and Bake
- Pour the custard filling evenly into the prepared pastry shells, filling them about three-quarters full.
- Bake for 15-20 minutes, or until the pastry is golden brown and puffed, and the custard is set and slightly caramelized on top.
