- 4oz bacon lardons(or diced bacon)
- 2 pcs eggs(large)
- 4 fl oz milk(whole milk or cream)
- 2oz gruyère cheese(shredded)
- 1 tbsp chives(fresh, finely chopped)
- 1/4 tsp salt
- 1/8 tsp black pepper(freshly ground)

Preparation
- Preheat your oven to 200°C (390°F). Lightly grease a mini muffin tin.
- Cook the bacon lardons in a skillet over medium heat until crispy. Drain on a paper towel and set aside.
- Roll out the puff pastry sheet slightly and use a 6 cm (2.5 inch) round cutter to cut out rounds. Place each round into the mini muffin tin cups, gently pressing to form a cup.
Assembly and Baking
- In a medium bowl, whisk together the eggs, milk (or cream), salt, and pepper until well combined.
- Divide the cooked bacon lardons and shredded Gruyère cheese among the puff pastry cups.
- Carefully pour the egg mixture into each pastry cup, filling them about three-quarters full.
- Bake for 20-25 minutes, or until the pastry is golden brown and the filling is set and lightly puffed. The center should not be liquid.
Finishing
- Remove the mini quiches from the oven and let them cool in the tin for a few minutes before carefully transferring them to a wire rack.
- Garnish with fresh chives before serving warm or at room temperature.
