- 1 pc puff pastry(sheet, thawed)
- 3 pcs red onions(medium, thinly sliced)
- 2 tbsp olive oil
- 2 pcs garlic(cloves, minced)
- 1/2 tsp fresh thyme(leaves)
- 1 tsp sugar
- salt(to taste)
- black pepper(to taste)
- 12 pcs anchovy paste(small dots or 12 individual anchovy fillets)
- 12 pcs black olives(pitted, niçoise preferred)
- 1 cup arugula(fresh)

Preparation
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Roll out the puff pastry sheet slightly and cut into 12 squares or rounds, about 2.5 inches each. Place them on the prepared baking sheet.
Caramelizing Onions
- Heat olive oil in a large skillet over medium-low heat. Add the sliced red onions and cook slowly, stirring occasionally, until deeply caramelized and tender, about 15-20 minutes. Add minced garlic, thyme leaves, and sugar during the last 5 minutes of cooking. Season with salt and pepper to taste. Let cool slightly.
Assembly and Baking
- Divide the caramelized onion mixture evenly among the puff pastry squares/rounds, spreading it almost to the edge. Place a small dot of anchovy paste or an anchovy fillet in the center of each, and then place one black olive on top.
- Bake for 15-20 minutes, or until the pastry is golden brown and puffed. Let cool for a few minutes on the baking sheet before transferring to a wire rack.
Serving
- Garnish each mini pissaladière bite with a few fresh arugula leaves just before serving.
