Ingredients

Cupcakes

  • 1 cup chocolate cupcake mix(Prepare according to package directions)
  • 1 tbsp vegetable oil
  • 1 pc eggs
  • 1 cup water

Kirsch Soak

  • 3 tbsp kirsch(Adjust to taste)
  • 2 tbsp simple syrup

Filling & Topping

  • 1/2 cup cherry jam(Good quality preserves)
  • 1 cup heavy cream(Cold)
  • 2 tbsp powdered sugar
  • 1 tsp vanilla extract
  • 2oz dark chocolate(Shaved or grated)

Instructions

Prepare Cupcakes

  1. Preheat oven to 350°F (175°C). Line a muffin tin with 12 liners.
  2. Prepare chocolate cupcake batter according to package directions, adding oil, eggs, and water.
  3. Fill liners about two-thirds full and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  4. Let cupcakes cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Make Kirsch Soak

  1. In a small bowl, whisk together kirsch and simple syrup until well combined.

Assemble Cupcakes

  1. Once cupcakes are completely cool, use a small knife or an apple corer to carefully hollow out the center of each cupcake, leaving about a 1/4-inch border.
  2. Brush the insides of the hollowed-out cupcakes with the kirsch soak.
  3. Spoon about 1-2 teaspoons of cherry jam into the hollowed center of each cupcake.
  4. In a separate bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
  5. Transfer the whipped cream to a piping bag fitted with a star tip.
  6. Pipe a generous swirl of whipped cream on top of each cupcake.
  7. Garnish with shaved or grated dark chocolate.

Tips

  • Ensure your heavy cream is very cold for the best whipping results. Chill the bowl and beater too.
