Mexican Street Corn Fritters

Mexican Street Corn Fritters

Inspired by the vibrant flavors of Mexican street corn (elote), these crispy fritters offer a delightful and savory way to enjoy corn. Each golden fritter is packed with sweet corn kernels, salty cotija cheese, a bright zing of fresh lime, and a subtle hint of smoky chili. They are quick to prepare and fry, making them perfect as a flavourful appetizer, a satisfying side dish, or even a light main course. The combination of textures – a crunchy exterior meeting a moist, flavorful interior – and the balance of sweet, salty, and tangy notes ensure an irresistible experience. Serve them warm, perhaps with a dollop of creamy crema or a zesty chipotle aioli, to elevate this comforting and exciting savory corn dish.

Instructions

Prepare the Fritter Batter

  1. 1In a large bowl, combine the corn kernels, crumbled cotija cheese, all-purpose flour, baking powder, smoked paprika, chili powder, ground cinnamon, garlic powder, salt, and black pepper. Mix well to ensure corn and cheese are evenly coated with the dry ingredients.
  2. 2In a separate small bowl, whisk together the egg, milk, lime zest, and lime juice until combined.
  3. 3Pour the wet ingredients into the dry ingredients and mix with a spoon or spatula until just combined. Be careful not to overmix the batter. Fold in the chopped fresh cilantro.

Fry the Fritters

  1. 1Heat the vegetable oil in a large non-stick skillet over medium heat. The oil should be about 1/2 inch deep. To test if the oil is hot enough, drop a tiny bit of batter into the oil; it should sizzle gently.
  2. 2Using a spoon (about 1.5-2 tablespoons per fritter), drop spoonfuls of the batter into the hot oil, flattening them slightly if desired. Do not overcrowd the pan; cook in batches if necessary.
  3. 3Cook for 3-4 minutes per side, or until golden brown and cooked through. The exact cooking time will depend on the size and thickness of your fritters.
  4. 4Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.

Serve

  1. 1Serve the Mexican Street Corn Fritters warm with your favorite toppings such as additional crumbled cotija cheese, a squeeze of fresh lime juice, a sprinkle of cilantro, or a side of crema or chipotle aioli.

Tips

  • If using frozen corn, make sure it's fully thawed and patted dry to prevent excess moisture from making the fritters soggy.
  • For an authentic touch, serve with a drizzle of Mexican crema or a homemade chipotle mayonnaise for an extra layer of flavor and creaminess.
