Instructions

Prep the Vegetables and Halloumi

  1. 1Preheat your grill pan or outdoor grill to medium-high heat. In a large bowl, toss the sliced bell peppers, zucchini, and red onion with 1 tablespoon of olive oil, salt, and pepper.
  2. 2In a separate small bowl, whisk together the lemon juice, remaining 1 tablespoon of olive oil, dried oregano, chopped fresh parsley, and fresh mint (if using). This will be your lemon-herb vinaigrette.

Cook the Vegetables and Halloumi

  1. 1Grill the halloumi slices for 2-3 minutes per side, or until golden brown and slightly charred. Remove from heat and set aside.
  2. 2Add the prepared vegetables to the grill. Cook for 5-7 minutes, turning occasionally, until they are tender-crisp and have nice grill marks.
