Prepare the Green Chutney

  1. 1In a blender or food processor, combine fresh coriander leaves, mint leaves, green chili, grated ginger, lemon juice, salt, and water.
  2. 2Blend until a smooth, vibrant green chutney forms. Add more water if needed to reach desired consistency. Taste and adjust seasoning.

Fry the Fritters

  1. 1Heat vegetable oil in a deep pan or kadai over medium-high heat. The oil should be hot enough (around 350°F / 175°C) for frying.
