Ingredients

  • 6 pcs liege waffles(stale or day-old, cubed)
  • 4 pcs eggs(large)
  • 2 cup heavy cream
  • 1 cup milk
  • 1/2 cup granulated sugar(adjust to taste)
  • 1/4 cup pearl sugar(for topping, optional)
  • 1 tsp vanilla extract
  • 1 tsp cinnamon(ground)
  • 1/4 tsp nutmeg(ground, optional)
  • 1 tbsp butter(for greasing the dish)

Instructions

Custard and Waffle Prep

  1. Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish with butter.
  2. In a large bowl, whisk together the eggs, heavy cream, milk, granulated sugar, vanilla extract, cinnamon, and nutmeg until well combined.
  3. Add the cubed Liege waffles to the custard mixture. Gently toss to coat and allow them to soak for at least 15 minutes, or until softened.

Assembly and Baking

  1. Pour the waffle and custard mixture into the prepared baking dish, spreading evenly.
  2. If using, sprinkle the pearl sugar evenly over the top of the bread pudding.
  3. Bake for 40-45 minutes, or until the bread pudding is set and golden brown on top. A knife inserted into the center should come out mostly clean.

Cooling and Serving

  1. Let the bread pudding cool for at least 10 minutes before serving.
  2. Serve warm, on its own or with a dusting of powdered sugar, whipped cream, or a drizzle of caramel sauce.
