Ingredients

  • 2lb fresh sardines(cleaned and scaled)
  • 2 pcs lemon(juiced)
  • 4 tbsp olive oil(extra virgin recommended)
  • 4 pcs garlic(minced)
  • 1/2 cup fresh parsley(chopped)
  • 2 tbsp fresh thyme(leaves stripped)
  • salt(to taste)
  • black pepper(freshly ground; to taste)

Instructions

Marinating the Sardines

  1. In a bowl, whisk together the lemon juice, olive oil, minced garlic, chopped parsley, and fresh thyme leaves.
  2. Add the cleaned sardines to the marinade. Gently toss to ensure each sardine is coated. Cover and refrigerate for at least 15 minutes, or up to 30 minutes.

Grilling the Sardines

  1. Preheat your grill to medium-high heat. If using a grill pan, lightly oil it.
  2. Remove sardines from the marinade, letting excess drip off. Discard the remaining marinade.
  3. Season the sardines generously with salt and freshly ground black pepper.
