Ingredients

  • 1 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2 pcs eggs(large)
  • 1/2 cup granulated sugar
  • 2 tbsp honey(local, if possible)
  • 1 tsp vanilla extract
  • 1 tsp culinary lavender(finely ground)
  • 1/2 cup unsalted butter(melted and cooled)
  • powdered sugar(for dusting (optional))

Preparation

  1. Whisk together the all-purpose flour, baking powder, and salt in a medium bowl. Set aside.
  2. In a separate large bowl, whisk the eggs and granulated sugar until light and fluffy. This should take about 2-3 minutes. Stir in the honey, vanilla extract, and ground culinary lavender.

Combining Ingredients

  1. Gently fold the dry ingredients into the wet ingredients in three additions, mixing until just combined after each addition. Be careful not to overmix.
  2. Slowly fold in the melted and cooled unsalted butter until fully incorporated.
  3. Cover the bowl with plastic wrap and chill the batter in the refrigerator for at least 15 minutes, or up to 1 hour. Chilling helps the Madeleines achieve their signature hump.

Baking

  1. Preheat your oven to 190°C (375°F). Lightly grease and flour a Madeleine pan, tapping out any excess.
  2. Spoon about 1 tablespoon of batter into each Madeleine mold. Do not overfill.
  3. Bake for 8-11 minutes, or until the edges are golden brown and the Madeleines have puffed up with a noticeable hump in the center.
  4. Remove the pan from the oven and immediately invert the Madeleines onto a wire rack to cool completely.
  5. Dust with powdered sugar before serving, if desired.
