Ingredients

Broth Base

  • 8 cup beef broth(low sodium preferred)
  • 10 pcs dried chilies(adjust to spice preference, tied in a knot or in a spice bag)
  • 2 tbsp sichuan peppercorns(whole, in a spice bag or cheesecloth)
  • 2 pcs star anise
  • 1oz ginger(sliced)
  • 4 pcs garlic cloves(smashed)
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil

Meats

  • 8oz thinly sliced beef(e.g., ribeye, sirloin)
  • 8oz thinly sliced lamb
  • 8oz uncooked shrimp(peeled and deveined)
  • 8oz pork belly(thinly sliced)

Vegetables

  • 1/2 cup napa cabbage(chopped)
  • 4oz enoki mushrooms(base trimmed)
  • 2 pcs bok choy(halved or quartered)
  • 1/2 cup sliced lotus root
  • 1/2lb tofu(firm, sliced)

Noodles

  • 8oz udon noodles(fresh or dried)
  • 4oz glass noodles(rehydrated)

Dipping Sauces (Optional)

  • 4 tbsp sesame paste
  • 4 tbsp soy sauce
  • 2 tbsp chili oil
  • 2 tbsp minced garlic
  • 2 tbsp chopped cilantro

Instructions

Prepare the Broth

  1. In a large pot, combine beef broth, dried chilies, Sichuan peppercorns, star anise, ginger, and smashed garlic cloves.
  2. Bring the broth to a boil, then reduce heat and simmer for at least 20 minutes to allow flavors to meld. Strain the broth, discarding solids, or keep ingredients in if using a mesh bag.
  3. Stir in soy sauce and sesame oil. Keep the broth warm over low heat.

Assemble Individual Pots

  1. Divide the prepared broth among individual small pots or heat-resistant bowls (ensure they are suitable for stovetop or portable burner).
  2. Place portable burners or heat sources at the table if using.
  3. Arrange platters of thinly sliced meats, vegetables, seafood, and noodles around the table.
  4. Provide individual bowls and chopsticks for diners.

Dine

  1. Each diner adds their preferred ingredients to their simmering pot of broth.
  2. Cook ingredients until done. Delicate items like thinly sliced meats cook in seconds, while vegetables may take a few minutes.
