  2. 2Gradually add water, whisking continuously, until you achieve a thick, smooth batter that is lump-free. The batter should be thick enough to coat the potato slices thinly. Set aside.

Prepare Potatoes and Fry

  1. 1Wash and peel the potatoes. Slice them very thinly, about 1/8 inch thick. Pat them dry with a clean kitchen towel to remove excess moisture.
  2. 2Heat vegetable oil in a deep frying pan or wok over medium-high heat. To test the oil temperature, drop a tiny bit of batter; it should sizzle and rise immediately.
