Ingredients

  • 14oz halloumi or kefalotyri(firm cheese, cut into 8 slices about 1 cm thick)
  • 1/2 cup all-purpose flour(for dredging; place in a shallow bowl and season lightly with salt)
  • 3 tbsp olive oil(extra-virgin olive oil for frying, enough to coat the pan)
  • 2 tbsp honey(mild-flavored honey, warmed slightly for easier drizzling)
  • 2 tbsp sesame seeds(toast until golden in a dry pan and set aside)
  • 1 pc lemon(zest and juice; cut into wedges for serving and extra squeeze)

Instructions

  1. Toast the sesame seeds in a small dry skillet over medium heat, shaking often, until fragrant and golden, about 1–2 minutes. Transfer to a plate.
  2. Pat the cheese slices very dry with paper towels to remove surface moisture; this helps achieve a crisp crust.
  3. Place the flour in a shallow bowl and lightly dredge each cheese slice, shaking off any excess flour.
  4. Heat the olive oil in a nonstick or cast-iron skillet over medium-high heat until shimmering but not smoking.
  5. Add the dredged cheese slices to the pan and fry until deep golden brown, about 2–3 minutes per side. Do not overcrowd; fry in batches if needed.
  6. Transfer the fried cheese to a paper towel-lined plate to drain briefly, then arrange on a warmed serving plate.
  7. Drizzle warm honey over the cheese, sprinkle with toasted sesame seeds, grate a little lemon zest and finish with a squeeze of lemon. Serve immediately.
