Instructions

Gummy Bears

  1. 1In a small bowl, sprinkle the gelatin over the cold water. Let it sit for 5-10 minutes to bloom (it will thicken and become jelly-like).
  2. 2In a small saucepan, gently heat the fruit juice and honey (and citric acid, if using) over low heat. Do not boil. Stir until the honey is fully dissolved.
  3. 3Remove the saucepan from the heat and add the bloomed gelatin to the warm juice mixture. Whisk until the gelatin is completely dissolved and the mixture is smooth.
  4. 4Carefully pour the mixture into silicone gummy bear molds or other small candy molds.
  5. 5Refrigerate the molds for at least 1-2 hours, or until the gummies are firm and set.
  6. 6Once set, carefully unmold the gummy bears. If they are sticky, you can lightly dust them with cornstarch or toss them with a tiny bit of oil, though this is usually not necessary.
