Instructions

Prepare Potato Salad

  1. 1Boil the potatoes until fork-tender. Drain and let cool slightly, then dice into small cubes.
  2. 2In a medium bowl, combine the diced potatoes, sour cream, chopped dill, mayonnaise, and Dijon mustard.
  3. 3Gently mix until the potatoes are well coated. Season with salt and freshly ground black pepper to taste.

Assemble Jars

  1. 1Choose four small glass jars or containers with lids.
  2. 2Spoon a layer of the potato salad into the bottom of each jar.
  3. 3Arrange a layer of the cut pickled herring over the potato salad.
  4. 4Top the herring with a layer of pickled red onions.
  5. 5Repeat the layers if your jars are large enough, finishing with pickled red onions.
  6. 6Garnish with a sprig of fresh dill.
  7. 7Seal the jars with lids and refrigerate for at least 30 minutes to allow flavors to meld.
