Herbed Pork Gyro Pita

Instructions

Marinade & prep

  1. 1In a bowl combine juice of 1 lemon, 2 tbsp olive oil, minced garlic, dried oregano, salt and pepper.
  2. 2Add the thinly sliced pork shoulder and toss to coat. Cover and refrigerate for at least 15 minutes or up to 2 hours.
  3. 3While pork marinates, slice tomatoes and red onion, and warm the pita in a low oven or skillet.

Cook

  1. 1Heat a large skillet over medium-high heat and add 1 tbsp olive oil until shimmering.
  2. 2Add marinated pork in a single layer (work in batches to avoid overcrowding) and cook 3–4 minutes per side until browned and cooked through.
  3. 3Remove cooked pork to a plate and let rest 2 minutes, then slice or chop into bite-sized pieces if needed.

Assemble & serve

  1. 1Spread about 2–3 tbsp tzatziki onto each warm pita, top with a portion of pork, sliced tomato and red onion.
  2. 2Squeeze a lemon wedge over each gyro, fold or wrap in parchment, and serve immediately.

Tips

  • Slice pork thin across the grain for tender bites; freezing briefly makes it easier to slice thinly.
  • Cook pork in a hot skillet in batches to develop a golden crust without steaming the meat.
  • Warm pita briefly on the pan, then wrap gyro in parchment for easy handling and juicier filling.
