Ingredients
- 4oz pancetta(diced)
- 2 tbsp olive oil
- 1 pc onion(chopped)
- 2 pcs carrots(chopped)
- 2 pcs celery stalks(chopped)
- 2 tsp garlic(minced)
- 1 pc zucchini(diced)
- 1 cup green beans(trimmed and cut)
- 14 1/2oz canned diced tomatoes(undrained)
- 6 cup vegetable broth
- 15oz mixed beans(drained and rinsed (e.g., cannellini, borlotti))
- salt(to taste)

- 1/2 cup parmesan cheese(grated, for serving)
Instructions
Soup Base
- In a large pot or Dutch oven, cook the diced pancetta over medium heat until crisp. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the pot.
- Add the olive oil to the pot if needed, then add the chopped onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the diced zucchini and green beans to the pot and cook for 3-4 minutes, stirring occasionally.
- Pour in the canned diced tomatoes and vegetable broth. Bring the mixture to a simmer.
- Add the drained and rinsed mixed beans to the pot.
- Season with salt and black pepper to taste.
- Reduce the heat, cover, and let the minestrone simmer for at least 20-25 minutes, or until the vegetables are tender and the flavors have melded.
Serving
- Ladle the hot minestrone into bowls.
- Garnish generously with the reserved crispy pancetta and grated Parmesan cheese.
