Instructions

Soup Base

  1. 1In a large pot or Dutch oven, cook the diced pancetta over medium heat until crisp. Remove the pancetta with a slotted spoon and set aside, leaving the rendered fat in the pot.
  2. 2Add the olive oil to the pot if needed, then add the chopped onion, carrots, and celery. Sauté until softened, about 5-7 minutes.
  3. 3Stir in the minced garlic and cook for another minute until fragrant.
  4. 4Add the diced zucchini and green beans to the pot and cook for 3-4 minutes, stirring occasionally.
  5. 5Pour in the canned diced tomatoes and vegetable broth. Bring the mixture to a simmer.
  6. 6Add the drained and rinsed mixed beans to the pot.
  7. 7Season with salt and black pepper to taste.
  8. 8Reduce the heat, cover, and let the minestrone simmer for at least 20-25 minutes, or until the vegetables are tender and the flavors have melded.

Serving

  1. 1Ladle the hot minestrone into bowls.
  2. 2Garnish generously with the reserved crispy pancetta and grated Parmesan cheese.
