Instructions

Prepare the Roasted Corn Salsa

  1. 1Preheat your broiler or a dry skillet to medium-high heat. If using a skillet, add the corn kernels and char them for 5-7 minutes, stirring occasionally, until lightly browned and roasted. If using a broiler, spread corn on a baking sheet and broil for 3-5 minutes, tossing once, until charred. Let cool slightly.
  2. 2In a medium bowl, combine the roasted corn, diced red onion, minced jalapeño, chopped cilantro, lime juice, olive oil, salt, and black pepper. Stir well and set aside to allow flavors to meld.

Cook the Halloumi

  1. 1Pat halloumi slices very dry with paper towels. Brush lightly with olive oil on both sides.
  2. 2Heat a grill pan or outdoor grill to medium-high heat. Grill the halloumi slices for 2-3 minutes per side, until golden brown with nice grill marks and slightly crispy.

Assemble the Tacos

  1. 1Warm the corn tortillas according to package directions, either in a dry skillet, microwave, or wrapped in foil in the oven.
  2. 2Arrange the warm tortillas on a serving platter. Place 1-2 slices of grilled halloumi in each tortilla.
  3. 3Top the halloumi with a generous spoonful of roasted corn salsa. Garnish with diced avocado or a dollop of avocado crema, and a sprinkle of crumbled cotija cheese if desired.
  4. 4Serve immediately and enjoy your vibrant vegetarian tacos!

Tips

  • Ensure halloumi is completely dry before grilling to achieve a superior sear and prevent it from sticking.
  • Do not overcrowd the pan or grill when cooking halloumi; work in batches for even browning.
  • Offer extra lime wedges and fresh cilantro on the side for guests to customize their tacos.
