Instructions

Grilling

  1. 1Heat a grill pan or outdoor grill to medium-high heat.
  2. 2Brush the halloumi slices and bell pepper chunks lightly with 2 tbsp of olive oil.
  3. 3Grill the halloumi for 2-3 minutes per side, until golden brown and slightly softened.
  4. 4Grill the bell peppers for 4-5 minutes, turning occasionally, until tender and lightly charred.
  5. 5Remove halloumi and peppers from the grill and set aside.

Assembling the Salad

  1. 1In a large salad bowl, combine the prepared tomatoes, cucumber, Kalamata olives, and red onion.
  2. 2Add the grilled halloumi slices and charred bell peppers to the salad bowl.
  3. 3Drizzle with the remaining 2 tbsp of olive oil.
  4. 4Sprinkle with dried oregano, salt, and freshly ground black pepper.
  5. 5Gently toss all ingredients together to combine.
