  1. Remove the porterhouse steak from the refrigerator at least 1 hour before cooking to bring it to room temperature.
  2. Pat the steak completely dry with paper towels. This is crucial for getting a good sear.
  3. Rub both sides of the steakgenerously with olive oil.
  4. Season both sides liberally with coarse sea salt and freshly ground black pepper.
  5. Rub the finely chopped fresh rosemary over the steak.

Cooking

  1. Preheat a cast-iron grill pan over high heat for about 5-7 minutes until it is very hot.
  2. Carefully place the seasoned steak onto the hot grill pan. You should hear a strong sizzle.
  3. Sear the steak for 3-4 minutes per side for rare, 5-6 minutes per side for medium-rare, adjusting for desired doneness. Use tongs to sear the edges as well.
  4. For thicker steaks, you may need to reduce the heat slightly after the initial sear and continue cooking, turning occasionally, until the desired internal temperature is reached.
  5. Use an instant-read thermometer: 120-125°F (49-52°C) for rare, 130-135°F (54-57°C) for medium-rare.

Resting and Serving

  1. Transfer the steak to a cutting board and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute.
  2. Slice the steak against the grain.
  3. Serve immediately.
