Ingredients

Lamb Souvlaki

  • 18oz lamb leg(boneless, cut into 2.5cm cubes)
  • 2 tbsp rosemary(fresh, chopped)
  • 1 tbsp mint(fresh, chopped)
  • 3 pcs garlic(cloves, minced)
  • 3 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp oregano(dried)
  • tsp salt(to taste; null)
  • tsp black pepper(freshly ground, to taste; null)

Mint Tzatziki

  • 1 pc cucumber(medium, grated and squeezed dry)
  • 7oz greek yogurt(plain, full-fat)
  • 2 tbsp mint(fresh, finely chopped)
  • 1 pc garlic(clove, minced)
  • 1 tsp lemon juice
  • 1 tsp olive oil
  • tsp salt(to taste; null)

Assembly

  • 4 pcs pita bread
  • cup lettuce(shredded; null)
  • cup tomato(chopped; null)
  • cup red onion(thinly sliced; null)

Instructions

Prepare Souvlaki Marinade

  1. In a bowl, combine chopped rosemary, chopped mint, minced garlic, olive oil, lemon juice, dried oregano, salt, and pepper.
  2. Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.

Make Mint Tzatziki

  1. In a medium bowl, combine the grated and squeezed cucumber, Greek yogurt, finely chopped mint, minced garlic, lemon juice, olive oil, and salt.
  2. Stir well to combine. Cover and refrigerate until ready to serve.

Cook the Lamb

  1. Preheat your grill or a grill pan over medium-high heat.
  2. Thread the marinated lamb onto skewers (if using wooden skewers, soak them in water for 30 minutes prior to prevent burning).
  3. Grill the lamb skewers for 3-4 minutes per side, or until cooked to your desired doneness.

Assemble the Wraps

  1. Warm the pita bread slightly. You can do this in a dry skillet, in the oven, or microwave.
  2. Spread a generous amount of mint tzatziki onto each warm pita.
  3. Top with shredded lettuce, chopped tomatoes, and thinly sliced red onion.
  4. Place the cooked lamb souvlaki onto the filling.
  5. Fold the pita bread to create wraps and serve immediately.
