- 2 tbsp rosemary(fresh, chopped)
- 1 tbsp mint(fresh, chopped)
- 3 pcs garlic(cloves, minced)
- 3 tbsp olive oil
- 1 tbsp lemon juice
- 1 tsp oregano(dried)

Mint Tzatziki
- 1 pc cucumber(medium, grated and squeezed dry)
- 7oz greek yogurt(plain, full-fat)
- 2 tbsp mint(fresh, finely chopped)
- 1 pc garlic(clove, minced)
- 1 tsp lemon juice
- 1 tsp olive oil
- tsp salt(to taste; null)
Assembly
- 4 pcs pita bread
- cup lettuce(shredded; null)
- cup tomato(chopped; null)
- cup red onion(thinly sliced; null)
Instructions
Prepare Souvlaki Marinade
- In a bowl, combine chopped rosemary, chopped mint, minced garlic, olive oil, lemon juice, dried oregano, salt, and pepper.
- Add the lamb cubes to the marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
Make Mint Tzatziki
- In a medium bowl, combine the grated and squeezed cucumber, Greek yogurt, finely chopped mint, minced garlic, lemon juice, olive oil, and salt.
- Stir well to combine. Cover and refrigerate until ready to serve.
Cook the Lamb
