Instructions

Prepare Lamb Filling

  1. 1Heat 1 tbsp vegetable oil in a large skillet or frying pan over medium-high heat.
  2. 2Add the chopped onion and cook until softened, about 3-4 minutes.
  3. 3Add the minced garlic and smoked paprika, cooking for another minute until fragrant.
  4. 4Add the minced lamb to the pan. Break it up with a spoon and cook until browned, about 5-7 minutes.
  5. 5Drain off any excess fat from the pan. Stir in the Worcestershire sauce, salt, and pepper.
  6. 6Continue to cook for another 2-3 minutes, allowing the flavours to meld. Remove from heat and set aside.

Make the Slaw

  1. 1In a medium bowl, combine the shredded cabbage, grated carrot, and sliced spring onions.
  2. 2In a small bowl, whisk together the mayonnaise, white wine vinegar, sugar, salt, and pepper to create the dressing.
  3. 3Pour the dressing over the cabbage mixture and toss well to combine. Refrigerate until ready to serve.

Assemble the Sliders

  1. 1Lightly brush the cut sides of the brioche slider buns with vegetable oil. Toast them lightly on a griddle or in a dry pan until golden brown, or under a broiler.
  2. 2Spoon a generous portion of the lamb filling onto the bottom half of each toasted slider bun.
  3. 3Top the lamb filling with a good serving of the prepared slaw.
  4. 4Place the top half of the brioche bun over the slaw to complete the slider.
  5. 5Serve immediately.
