Elegant Chanterelle Mushroom Omelet with Truffle Oil

Ingredients

  • 3 pcs eggs(large, at room temperature)
  • 4oz chanterelle mushrooms(cleaned and trimmed)
  • 1 tbsp butter
  • 1 tsp white truffle oil(to taste, for drizzling)
  • 1 tbsp parsley(freshly chopped, for garnish)
  • salt(to taste)
  • black pepper(freshly ground, to taste)

Instructions

Mushroom Preparation

  1. Heat 1/2 tbsp of butter in a non-stick skillet over medium-high heat.
  2. Add the cleaned chanterelle mushrooms and sauté for 3-4 minutes until slightly softened and fragrant. Season with a pinch of salt and pepper.
  3. Remove mushrooms from the skillet and set aside.

Omelet Preparation

  1. In a bowl, whisk the eggs with salt and pepper until well combined and slightly frothy.
  2. Wipe the skillet clean and return it to medium heat. Add the remaining 1/2 tbsp of butter and let it melt, swirling to coat the pan.
  3. Pour the whisked eggs into the hot skillet. Cook for 1-2 minutes, gently pushing the cooked edges towards the center with a spatula, allowing the uncooked egg to flow underneath.
  4. Once the omelet is mostly set but still slightly moist on top, spoon the sautéed chanterelle mushrooms over one half of the omelet.
  5. Carefully fold the other half of the omelet over the mushrooms using the spatula.
  6. Cook for another 30-60 seconds, or until the omelet is cooked through to your liking.

Serving

  1. Gently slide the omelet onto a serving plate.
  2. Drizzle with white truffle oil and garnish with freshly chopped parsley.
