Ingredients

Salad Base

  • 9oz rice noodles(Cooked according to package directions, then cooled)
  • 5oz mixed greens(Washed and dried)

Toppings

  • 2 pcs chicken breast(Boneless, skinless, cut into bite-sized pieces)
  • 7oz pickled vegetables(Assorted, such as carrots, daikon radish, cucumber, thinly sliced)
  • 1 tbsp sesame oil
  • 1 tsp soy sauce
  • 1 tsp garlic(Minced)
  • 1 tsp sesame seeds(Toasted, for garnish)

Gochujang Vinaigrette

  • 2 tbsp gochujang
  • 2 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp water(Or more, to reach desired consistency)

Instructions

Prepare Chicken

  1. In a bowl, toss the chicken pieces with 1 tbsp sesame oil, 1 tsp soy sauce, and 1 tsp minced garlic.
  2. Grill or pan-fry the chicken until cooked through and lightly browned. Set aside.

Make Vinaigrette

  1. In a small bowl, whisk together gochujang, rice vinegar, honey, and 1 tbsp sesame oil.
  2. Gradually whisk in water until the dressing reaches your desired consistency.

Assemble Salad

  1. Divide the mixed greens and cooked rice noodles among four serving bowls.
  2. Arrange the grilled chicken and assorted pickled vegetables over the greens and noodles.
  3. Drizzle generously with the gochujang vinaigrette.
  4. Garnish with toasted sesame seeds.
