- 5oz mixed greens(Washed and dried)
Toppings
- 2 pcs chicken breast(Boneless, skinless, cut into bite-sized pieces)
- 7oz pickled vegetables(Assorted, such as carrots, daikon radish, cucumber, thinly sliced)
- 1 tbsp sesame oil
- 1 tsp soy sauce
- 1 tsp garlic(Minced)
- 1 tsp sesame seeds(Toasted, for garnish)
Gochujang Vinaigrette
- 2 tbsp gochujang
- 2 tbsp rice vinegar
- 1 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp water(Or more, to reach desired consistency)
Instructions
Prepare Chicken
- In a bowl, toss the chicken pieces with 1 tbsp sesame oil, 1 tsp soy sauce, and 1 tsp minced garlic.
- Grill or pan-fry the chicken until cooked through and lightly browned. Set aside.
Make Vinaigrette
- In a small bowl, whisk together gochujang, rice vinegar, honey, and 1 tbsp sesame oil.
- Gradually whisk in water until the dressing reaches your desired consistency.
Assemble Salad
- Divide the mixed greens and cooked rice noodles among four serving bowls.
- Arrange the grilled chicken and assorted pickled vegetables over the greens and noodles.
- Drizzle generously with the gochujang vinaigrette.
- Garnish with toasted sesame seeds.
