Ingredients

  • 7oz feta cheese(crumbled)
  • 4oz greek yogurt(full fat)
  • 1/2 pcs cucumber(finely diced)
  • 1 pc tomato(very finely diced, seeds removed)
  • 1/4 pcs red onion(very finely minced)
  • 2 tbsp olive oil(extra virgin)
  • 1 tsp oregano(dried)
  • 1 tsp lemon juice
  • black pepper(freshly ground, to taste)

Instructions

Preparation

  1. In a food processor, combine the crumbled feta cheese and Greek yogurt.
  2. Process until smooth and creamy, scraping down the sides as needed.
  3. Add the finely diced cucumber, tomato, minced red onion, extra virgin olive oil, dried oregano, and lemon juice to the food processor.
  4. Pulse a few times until the vegetables are incorporated but still have a slight texture; do not over-process into a puree.
  5. Season with freshly ground black pepper to taste. (Salt is usually not needed due to the feta's saltiness).
