Ingredients

  • 2lb potatoes(peeled and thinly sliced)
  • 1oz anchovies(oil-packed, drained and chopped)
  • 2 cup heavy cream
  • 1 pc onion(thinly sliced)
  • 1/4 cup breadcrumbs(plain)
  • 2 tbsp butter(melted, plus more for greasing)
  • salt(to taste)
  • black pepper(freshly ground, to taste)

Instructions

Bake Preparation

  1. Preheat oven to 400°F (200°C). Grease a baking dish with butter.
  2. In a large bowl, combine the thinly sliced potatoes, chopped anchovies, and sliced onion.
  3. Pour the heavy cream over the potato mixture. Season with salt and pepper. Toss gently to combine.
  4. Transfer the mixture to the prepared baking dish, spreading it evenly.
  5. In a small bowl, mix the breadcrumbs with the melted butter. Sprinkle this mixture evenly over the top of the potatoes.

Baking

  1. Cover the baking dish with aluminum foil.
  2. Bake for 30 minutes.
  3. Remove the foil and continue baking for another 15-20 minutes, or until the top is golden brown and the potatoes are tender when pierced with a fork.

Tips

  • Ensure potatoes are sliced uniformly thin for even cooking and a creamy texture. Use a mandoline for best results.
  • If the top is browning too quickly, you can loosely tent it with foil for the remainder of the cooking time.
  • Serve hot as a delicious side dish or a vegetarian main course with a crisp green salad.
